On a faithful winter Saturday evening, the 23rd August 2014, 4 renowned Melbourne chefs namely Chef De Cuisine Jeffrey Tan from IPF Culinary Consultancy, Executive Chef Ikuei Arakane from D0-Imaginia, Executive Chef Ryo Kitahara from Third Wave (former head chef of Heirloom) and Executive Pastry Chef Sonia Anthony from Masons of Bendigo; together with 2 assisting chefs namely Chef Angela Shiu and Chef Adrian Hii, plus 5 kitchen helpers namely Roslyn Gaylor, Karen Mead, Abbie Chu, Daniel Lim (co-extreme foodie) & Roslyn Foo (yours truly) all volunteered their precious time in the name of charity and created a gastronomy storm in a beautiful suburb of metro Victoria, Australia.
In the luxurious private home of a charitable couple, our 4 heroic chefs designed the following menu:
Salmon Yukke (Japanese Tartare) by Chef Ryo Kitahara
Bloody Mary Oysters by Chef Jeffrey Tan
White Bait Omelette by Chef Jeffrey Tan
Lightly Smoked Kingfish, Celeriac Remoulade, Candied Almond, Wasabi Crumble by Chef Rio Kitahara (Cold)
Pan-fried Fish (Market Availability) and Bok Choy with Sichuan Mapo Sauce by Chef Ikuei Arakane
Queensland Spanner Crab Meat, Mushroom Arborio Rice, Spinach, Truffle Oil by Chef Jeffrey Tan
Slow Cooked Pork Belly and Sautéed Scallop by Chef Ikuei Arakane
Spicy Duck Breast, Taro Roll, Honey Soya, Avruga Caviar, Orange Yoghurt by Chef Jeffrey Tan
Baked Lemon Tart with Central Victorian Flavours by Pastry Chef Sonia Anthony
Here are the final creations, one extra dish was created too, all 10 beautifully presented dishes using the best of ingredients, were delightfully served to the 13 guests (3rd canapes went into the tummies too quickly.. we missed snapping a photo of it, oops!) :
This private charity dinner was auctioned from the recent Alzheimer’s Gala Dinner, A Night To Remember, held at RACV City Club in May 2014. Leader of the pack, the man who founded the Cooking for Charity Initiative, is the renowned, very humble & very adorable Chef De Cuisine Jeffrey Tan, a Malaysia born Chinese who resides in Melbourne. Since it’s inception about 9 years ago, Chef Jeffrey Tan has helped raised over aud$2.2million to date for various charities in and beyond Australia. Chef Jeffrey Tan has earned the respect of top chefs all around Australia and Asia, he now has a closely knitted team of top Melbourne chefs who often participate in his charity dinners.
